I've been thinking about food even more than usual. Arctic food in particular. In my notes from a recent trip to Alaska I came across some extracts from The Yukon Cookbook, which was lying on a shelf in my host's house in Nome, Alaska. Of particular interest: Stuffed Moose Hearts ('Open up heart, place stuffing inside'); Pot Roast Ground Squirrel ('recipe may also be used for hoary marmot or muskrat'); Boiled Moose Nose ('This is a delicacy') and Instant Powdered Moose ('When you come in from the bush tired and hungry, throw 3 tablespoons instant moose into the frying pan, add water and in no time you will have a thick sludge.'). Jamie Oliver eat your (stuffed moose) heart out. CommentsRichard 03/21/2011 03:10
I worked for a short time in northern British Columbia, with the native people. At a potlatch they made me a member of their tribe. They had wonderfully exotic food including 'ice cream' made from the wild plants as well as elk meat etc. Melanie 03/21/2011 07:22
I'm intrigued by the wild plant flavour ice-cream, though not actually enough to want to sample it. You may be interested in this film, made by a vegan New Yorker who went to Alaska and discovered 'country food.' http://www.eatingalaska.com/images.html john walker 08/15/2011 15:00
Caught some of your adventures on PBS. Wanted to invite you to a High School Careers program that features both Culinary Arts, & Digital Film Production classes. I thought you'd blow them both away! Let us know if you ever come through Denver, lunch is on us. Looking forward to it! Leave a Reply |
